The Papa a la Huancaina, together with the Ceviche, is one of the most popular and representative gastronomic products in Peru.

The elaboration consists of the preparation of a sauce whose base is a fresh cheese and yellow pepper. Evaporated milk and oil are added to form the semi-liquid consistency that is required.

It is served on slices of cooked potatoes, which in turn rest on a lettuce leaf. For its presentation, add sliced hard-boiled egg and botija black olives.
